Tropical Stir Fry
Tropical Stir-Fry - Quick and Easy Chop (not too fine) a bunch of your favorite stir-fry veggies, or choose from this list: bok choy, broccoli, nappa cabbage, onions, red and green peppers, chili peppers, celery, bean sprouts, mushrooms... Prepare your protein in bite-size or larger pieces. Choose from: tofu, shrimp, cooked pork, leftover chicken... Chop the secret ingredients! These are: candied ginger and candied pineapple. You will want several tablespoons each for each 4 servings. Cook the rice (any kind) in a rice cooker, enough for your group or double that so you have some for another day. Or use the planned-over rice from last night's meal. Pour a couple of tablespoons of good oil into your frying pan or wok. Sunflower or sesame or peanut oil are all good choices. When the oil is hot, add the non-leafy veggies to the pan and saute on high heat. As soon as they begin to give up their water (several minutes), add the protein, and stir till it is heated. Next add the secret ingredients. At the last moment before serving, stir in the leafy veggies and cook just till they begin to wilt. Pour in one can of coconut cream per four servings, heat to boiling, add a small amount of light soy sauce if you want a somewhat saltier taste, and serve immediately over the rice. It's a complete meal. Quick to cook and yummy. |
